Exploring Joburg's All Time Go To Meal : Interesting Kota Recipes.

It's The festive season though the country is still on lockdown, however the festive season has and is always regarded as a time of the year where people consume a lot of food because people spend most of their time at home or on the road. However  wherever everyone finds themselves during the festive you will always catch them with something to nibble on their hand. Whether they are at home binging on TV Shows, in the mall, in the car for a road trip or at a chillas in their friends place, bottom line is that most people just cant stop eating during December Holidays it almost everyone's dilemma.

Perhaps the amount of free time people have on the hands and the lowered pressure from work or school ultimately gives them more time to just enjoy their food while experimenting with other dishes they have never got the time to try out during the course of the year.

One of the most all year round common dishes in kasi street all over South Africa but popularly in Joburg is a kota. The  festive season is a time or resting and no one wants to see themselves standing for the longest of time on the stove preparing food. Thus this is where the convenience of a kota comes in.  According to the Cooking queen  "A kota is a South African Sandwich. It’s made from a hollowed out quarter loaf of bread filled with a variety of ingredients such as chips, polonium, cheese, Vienna and atchar. The word kota is derived from the English word quarter, meaning a quarter of bread"
 
So as you rest and comply to the Covid 19 regulations of staying home and keeping safe we thought why not share with you some of the best kota recipes you can try out for you and your family, or better you can share with the recipes with your local kota to help improve their menu so that the famous street meal can keep on improving as  our societies change for the better. 

 Recipe for Grilled Chicken Kota with chips, bacon and cheese!

Ingredients

Quarter loaf SASKO Premium White bread
120g chicken breasts
1 tbsp chicken spice
120g frozen chips
130ml BBQ marinade
4 slices streaky bacon
½ onion sliced
2 slices cheese
15ml Achaar
Salt for seasoning
Oil for frying

 
 


How to
Cut the bread into a quarter loaf and remove a section of the inside.

Cut the chicken breasts into bite size pieces

Season the chicken breasts with chicken spice and place on a hot grill until
cooked. Place the cooked chicken into the marinade

Pan fry the streaky bacon and onions until golden brown

Deep fry the chips until golden, season with salt

Place the chips and chicken, cheese, bacon and onions into the quarter loaf
and drizzle with extra BBQ sauce and achaar. 

 

Full House Kota

This is kind of like a bunny chow, but not. Instead, the quarter loaf of bread is filled with steak or chicken, French fries, ham and chakalaka. 

 
Chakalaka:
For the chakalaka, heat the oil and fry onions and garlic until soft and browned. Add the Robertsons Rajah Medium Curry Powder and cook for 2 min.
Add the green pepper, chilli, carrot, Knorr Tomato Pronto, cabbage, Robertsons Veggie Seasoning and Knorr Aromat Original and simmer for 10 min. Add the baked beans and simmer for 2 min.

Chips:
For the chips, pre-heat the oil in the deep fryer at 180 °C. Fry the chips until golden brown. Put the fried chips on a baking tray lined with paper towel and sprinkle with Robertsons Chip & Potato Seasoning.

 


Steak:
On a flat top or griddle pan, heat the oil on a medium heat and fry the steak seasoned with Robertsons Barbecue Spice for 2 min on each side.

Eggs:
Season the fried eggs with Knorr Aromat Original.

Pink sauce:
For the pink sauce, in a bowl, mix the Knorr Sweet Chilli Sauce, Hellmann’s Tangy Mayonnaise and water together.

To assemble:
Cut the centre of the quarter loaf out, pour in a spoon of the chakalaka, follow with chips, ham, steak, 15 ml pink sauce, cheese, 15 ml pink sauce and egg. Top with the cut out piece of the bread and serve.

Chef's Tip:Cut the loaf in half and cut the two halves in half again to get equal quarters. Season chips with Robertsons Chip & Potato Sesaoning whilst hot.
Protein option: Steak can be replaced with chicken breast.

The quarter of the loaf of bread hollowed out, filled with the layer of prepared Mash potatoes and the spaghetti mince sauce, mango atchar and the cooked chicken feet on top and topped with the bread. 



Filling for Kota:

  1. Pour cold water into the pot, add chicken feet, chicken necks, giblets, and Robertson’s rajah mild & spicy.
  2. Bring to boil and simmer until chicken feet is cooked.
  3. Season with Knorr Aromat and stir well.
  4. Bring water to a boil and add the butter, Turmeric, and Knorr Aromat.
  5. Remove from stove.
  6. Add milk.
  7. Pour Knorr Mash Flakes and briskly stir with a whisk. Cover and leave to rest.


 
 
Assembling of 1 x kota(1/4)

Hollow the inside of the bread, add the portioned prepared Mash potatoes and the portioned spaghetti mince sauce, mango atchar and place the cooked chicken feet on top and top it with the bread.
